So I'm making, kind of like a salmon provencal.
It's all these flavors that just grow, or are caught, or harvested in Provence in the South of France, other than the salmon, I guess, of course.
But they all roast really well together.
So we're just gonna roast everything together.
So let's start layering some zucchini on a sheet pan.
Now, this is a cookie sheet layered with parchment paper and it has a little bit of cooking oil sprayed on it just to make sure that nothing sticks.
All right, so I have some Julienne red onion to kind of go on and in-between.
And then finally, I have some tomatoes that we'll kind of place in and between the zucchini slices, like so.
And everything will roast underneath the fish.
And we're gonna drizzle that with a little bit of olive oil.
We're gonna throw some slices of garlic over the top.
A little bit of dried oregano.
I'm gonna use some flaky salt and some cracked black pepper.
And then we're gonna place our salmon right on top.
I have skin on salmon, scales off, skin on, because I love to eat and cook salmon with skin on.
I find that it's a lot more moist afterwards.
A little drizzle of oil right over the fish.
Of course, we have to season our fish, as well.
A little salt and pepper.
And then right before it goes in, I'm just gonna squeeze some fresh lemon juice right over the top.
Let's go ahead and head into, I have a really hot oven ready for us.
For the toppings of the salmon, which I'm about to go get in the oven, I've got a beautiful yogurt mixture with some chilies called Aleppo dried chilies, and a little bit of olive oil and salt for the top, and of course a little bit of fresh herbs.
So we've got mint and dill.
So everything has softened quite a bit.
A lot of the juice has come out of that zucchini, it looks really delicious.
So let's go ahead and serve a little bit to ourselves.
I just love roast tomatoes with fish.
I think it's just a beautiful marriage of flavors.
And of course the zucchini just makes it.
It's still a little crisp, but juicy.
And we'll go ahead and drizzle on that yogurt sauce with the chilies in it, and add some fresh herbs to just finish it up so nicely.
Yay.
And there you have it.
